Sweet Potato Pie





SWEET POTATO PIE 


3 1/2 C. COOKED MASHED SWEET POTATOES
4 EGGS
1 HEAPING TSP. PUMPKIN PIE SPICE
2 TSP. VANILLA EXTRACT
1/2 CUP BUTTER, SOFTENED
2 C. SUGAR
1/2 TSP. EACH NUTMEG AND SALT
13 OZ. CAN EVAPORATED MILK
2 (9 OZ.) PIE SHELLS



COMBINE SWEET POTATOES, BUTTER, AND SUGAR IN BOWL
. MIX WELL. ADD EGGS ONE AT A TIME. BEAT WELL AFTER EACH ADDITION. 
STIR IN NUTMEG, SALT, MILK, AND FLAVORING. POUR INTO PIE SHELLS. 
PLACE ON COOKIE SHEET.
BAKE 425 DEGREE OVEN FOR 20 MIN.
REDUCE TO 325 DEGREE AND BAKE 30-45 MIN. LONGER OR UNTIL PIE TEST DONE.
MAKES TWO PIES.
